Cranberry Scones


I followed this video:

ingredients:

2 cups flour

1/3 cups sugar

2 1/2 tsp baking powder

1/2 tsp salt

1/2 cup butter

2/3 cup cranberry (I used dried cranberry)

2/3 cups milk

1 tsp vanilla
1. Mix flour, sugar , baking powder and salt in a large bowl.

2. Cut in butter. And use hands to make crumbs.

3. Add in cranberries.

4. Mix vanilla and milk together. Then pour mixture into the flour crumbs till it clings together.

5. Pat dough into a round one and cut into triangle shape.


6. Preheat oven to 200 degree C. Brush scone with milk.

7. Bake for 17 mins.


They taste really good. Crunchy outside but soft inside.

Spinach & Mushroom Egg


Ingredients:

Spinach ( put in boiling water for several seconds. Take out. Cool and drain. Then chop into small pieces).

Mushroom

1 small onion (chop into shreds)

Eggs 2

Salt

Black pepper

Cummin seed

Garlic 2 cloves ( chopped into granules)

Red chili (optional)

Cheese

1. Heat a little olive oil in the pan. Put in onion, stir fry a bit.

2. Add in mushroom. Stir fry till mushroom turns soft.

3. Put in spinach. Stir evenly.

4. Sprinkle salt, black pepper and cummin seed.

5. Dig two small holes in vegetables. Beat in egg in each hole.

6. Cover the pan with lid for 3 mins.

7. Spread red chili rings, and cover the lid for another 1 min.


8. Dish out in the plate. Sprinkle Parmesan cheese. I also sprinkle some cheddar cheese shreds.

9. In the microwave stove for around 3 mins or till cheese melts.

Dark Brasied Chicken Leg


Ingredient:

Boneless chicken leg

Light soy sauce 1 tsp

Dark soy sauce 1.5 tsp

Sugar 1 tsp

Salt 1/4 tsp

Hot water 4 tsp
1. Heat the pan. Put in the chicken with skin side down. 

2. Flip it over when the skin side turns golden brown. And fry the other side till golden brown too.

3. Take the chicken out and cut into smaller pieces. Pour the chicken oil in the pan out.

4. Heat the pan and put chicken pieces back in the pan again. Stir fry for a minute or two.

5. Add in light soy sauce, dark soy sauce and sugar. Stir fry till each chicken pieces is coated with sauce.

6. Add in around 4 tsp hot water. Turn to medium or low heat. Cover the lid. Braise for a while till the water reduces to little.

7. Turn to high height. Keep stir frying at the same time to make sauce condensed. Then turn off the stove and dish out.


I served it with cucumber slices. My husband loves it very much.

Brazilian Cheese Bread

I got the recipe from my English teacher. I changed the recipe a little bit.

Ingredients:

Water 45 ml

Milk 45 ml

Olive oil 45 ml

Tapioca flour 125 g

Salt 1 pinch

Half beaten egg

Grated Parmesan cheese 30 g

1. Boil water, milk, olive oil together with low heat. Once boiled, remove from the stove.

2. In a large bowl mix tapioca flour with water, milk & oil mixture. Mix them well.

3. Add in Parmesan cheese and knead again.

4. Last add in half egg.

5. Preheat oven to 200 degree C. Make batter into small balls. And place them on the baking pan.

6. Bake for 20 mins.

Stir Fry French Bean Slices

1. Cut French bean into slices. 

2. Heat a little oil in the pan.

3. Add in chopped garlic. Stir fry a bit.

4. Add in French beans. Stir fry till their color turns darker.

5. Add in salt and light soy sauce to season. Stir evenly. Sprinkle a little sugar. Add in 2 tsp water.

6. Cover the pan with lid for 2 mins. And it’s done.


Quick, easy and healthy.

Kimchi Zucchini Pancake

Ingredients:

Chopped Kimchi 150g 

Half Zucchini (chopped into bits)

1 small onion ( chopped into bits)

Flour 100g

Salt 1 tsp

Black pepper 1 tsp

Water 

1 egg
1. In a large bowl mix kimchi, Zucchini and onion. Sprinkle 1 tsp salt.

2. Add in flour and water. Mix evenly. Beat in 1 egg.

3. Add in black pepper. Stir evenly.

4. Heat some oil in the pan. Beat a spoonful batter in the pan. Fry both sides till golden brown.

Teriyaki Chicken

Ingredients:

Boneless chicken leg

Dark soy sauce 2 tsp

Cooking wine 1 tsp

Water 2 tsp

Sugar 2 tsp

Honey 2 tsp

White sesame
1. Heat a pan on the stove. When it’s hot, put chicken into the pan with the skin side down.

2. When the downside turns golden brown, flip the chicken over. Fry the other side till golden brown too.

3. Take the chicken out, and cut into smaller pieces.

4. Put the chicken pieces into pan. Add in dark soy sauce, cooking wine, sugar, water and honey. Stir evenly to make sure chicken is coated with sauce.

5. Turn the height higher. Keep stir frying till sauce reduces to almost dry. Sprinkle white sesame.


If you want to serve with rice, you can save more sauce for the rice.

Very yummy.

Mushroom, Corn & Bell Pepper Pizza

Ingredients:

Mushroom (put in boiling water for 2 mins. Take out. Drain and squeeze the water out)

Frozen corn kernel ( put in the boiling water for 1 min. Take out. Drain and squeeze the water out)

Bell pepper ( chopped into small pieces)

1. Poke the pizza dough with a fork for several times.

2. Brush pizza dough with creamy pizza sauce.

3. Sprinkle corn kernels and mushroom. Then spread bell pepper on them.

4. Sprinkle some black pepper. 

5. Spread cheese on the top.

6. Preheat oven to 230 degree C. Bake for 10 mins.

Shiitake & Wolfberry Chicken Leg Soup

Ingredients:

Several shiitakes

Some wolfberries

1 big whole chicken leg

Ginger slices

Salt

Chopped spring onion

Put chicken leg, shiitake, ginger slices and wolfberries in a deep pot. Add in enough water covers all ingredients. 

When water boils, turn to low heat. Cover the lid. And simmer for at least 40 mins.

Sprinkle some salt and chopped spring onion. Cover the lid for another minute.

Cheesey Farfalle Pasta

Ingredients:

Small onion 1 (chopped into small bits)

Bacon bits

Tomato 2 (peeled and chopped into small bits)

Frozen green peas ( in boiling water for 1 min)

Farfalle pasta (cooked)

Salt

Black pepper

Cheese

Tomato sauce

1. Heat a little oil in the pan. Add in bacon bits. Stir fry till bacon gets a bit burnt.

2. Add in onion bits. Stir fry a bit.

3. Put in all the tomato pieces. Sprinkle some salt. Add in 2 tsp tomato sauce. Braise for a while till tomatoes become tomato sauce.

4. Add in green peas. Simmer for 1 min. Turn off the stove.

5. Add in cooked farfalle pasta. Sprinkle some black pepper. And stir evenly.


Spread cheese on farfalle. Put in the microwave for around 2 mins till cheese melts.


Very yummy.
