Gingerbread Man Cookies

It’s Christmas season. I found this great gingerbread man cookie recipe on YouTube.

Ingredients:

3 cups flour

3/4 tsp baking soda

1/2 tsp salt

2 tsp ground ginger

1 tsp ground cinnamon

1/4 tsp ground cloves

1/4 tsp ground nutmeg

Mix all these dry ingredients in a large bowl.

1. Cream 1/2 cup butter with 1/2 cup sugar till light and creamy.

2. Beat in one large egg.

3. Add in 2/3 cup molasses ( light molasses is used in the video, but I used dark molasses).

4. Add dry ingredients mixture into molasses mixture 1/3 at a time.

5. Chill the dough in the fridge at least 2 hours till it gets firm. ( I put in the fridge for overnight).

6. Roll dough into thin large piece. Use a cutter to cut into gingerbread man shape.

7. Preheat oven to 180 degree C and bake for 8-12 mins.



Decorate with icing.





There will be a Christmas fair at the church. So I baked around 200 cookies. 


Mushroom & Bacon Pizza

1. Use a fork to poke on the pizza dough several times.

2. Brush pizza dough with white sauce.

3. Spread Mushroom slices.

4. Sprinkle bacon bits.

5. Sprinkle cheese.

Preheat oven to 230 degree C and bake for 10-15 mins.


Stir Fry Pork With Cauliflowers 


I like this dish very much. There are usually two kinds of cauliflower. One is the type having long stem, and the other’s stem is short. I prefer the first type. It tastes better. And it’s ideal to be stir fried.

1. Heat a little oil in the pan. Put in pork slices. Stir fry till a bit golden brown. Then take pork out.

2. Leave the oil in the pan. Heat it again. Add in a little chopped garlic and ginger. Stir fry a bit.

3. Add in cauliflower (torn into small parts already). Stir fry till the edge of cauliflower becomes a bit golden brown.

4. Put pork slices back in the pan. Stir fry with cauliflower evenly.

5. Add in chopped red chili and 1 tsp of light soy sauce. Stir fry evenly.

6. Because my cauliflower pieces were kind of big, so I added 2 tsp water, turned to medium heat. And covered the pan with lid for 2-3 mins. 

7. Remove the lid. Turn to high height. Sprinkle some salt and stir fry evenly.

Sweet & Sour Chicken Meatball


Chicken meatball was bought from supermarket.

1. Melt some butter in the pan. Put in chicken meatball. Pan fry them till the surface becomes a bit golden brown.

2. Add in 3 or 4 tsp tomato sauce and 2 tsp sugar. Stir them well to let meatball be coated with sauce.

3. Pour in water reaches half height of meatball.

4. Turn to medium low heat. Cover the pan with lid. Simmer for around 30 mins or till sauce becomes condensed. Flip them several times while simmering.

5. Once sauce becomes condensed, they are ready to serve.

Salted Butter Spread For Bread


My husband loves spreading salted butter on bread. Yet, today we only had unsalted butter in the fridge. So I made this spread by myself. It’s very easy to make.

Soften butter you need in a small bowl. Sprinkle some salt, a little mixed herbs and garlic powder. Then stir and blend them well.



It tastes great. My husband loves it more than salted butter. I saw his eyes light up when he had a bite of bread with this spread. 🙂

Big Bone White Gourd Soup


It’s an easy soup to cook. But it needs at least one hour. 

Put big bone in a deep pot with enough water. Turn to high heat.

When water boils, take the big bone out and rinse. Pour the water in the pot out.

Big bone in the pot again with enough water. Turn to medium heat. When water boils, turn to low heat. And slow cook for at least half an hour. I cooked it for 1 hour.

Add in white gourd pieces and some wolf berries. Simmer for at least another half an hour.

Sprinkle salt to season and some chopped spring onion. And ready to serve.

Tenggiri in Dark Sauce


1. Heat a little oil in the pan. Fry tenggiri filet till a bit golden brown.

2. Add in 1 tsp light soy sauce, 1/2 tsp dark soy sauce, 1 tsp sugar. Stir fry evenly and let filet coat with sauce.

3. Pour in enough hot water covers filet. Add in star anise and ginger slice. Cover the pan with lid.

4. When the water reduces to 1/3, turn to high heat. And flip the fillet over till sauce condensed.

5. Place filet in the plate. Pour dark sauce over it and sprinkle some spring onion shreds.

Scrambled Egg with Leek

It’s a very easy dish. I learned from my father. He seems to like this dish very much. 

Beat two or three eggs in a bowl. Mix well.  Heat a little oil in the pan. Pour egg in. Once the bottom solidifies, stir with chopsticks. And dish out once a little done.

Cut leek into medium pieces. Heat a little oil in the pan. Put leek in. Stir fry till leek turns darker in color and softened. 

Sprinkle some salt. Stir fry for another minute or two. Add in scrambled egg. Stir fry evenly. 

Cheesey Croquette 


1. 2 medium potatoes peeled and cut into small pieces.

2. Boil or steam till done.

3. Put frozen carrot dices, corns and sweet peas in boiling water for several seconds. Then take out and drain.

4. Mash potato pieces in a bowl. Add in carrot, corn and sweet peas. Stir well.

5. Sprinkle salt and black pepper. Stir evenly.

6. Put a spoonful of mashed potato in hand. Add in some cheese. Then wrap it up and make into round shape.

7. Coat rounds with a thin layer of flour, then egg mixture and bread crumbs at last.

8. Fry in the pan till golden brown. I just shallow fried them.



Served with sauce you like.
