Easy & Yummy Quail Egg

First, boil quail eggs in boiling water for 5 mins. 

Then take them out and soak in cold water.

After they are completely cool, Gently remove the shell. 

Put quail eggs in the plate. Next step is to prepare sauce.

Heat pan on stove. Add in a little tsp oyster sauce, light soy sauce, sugar and water. Keep stirring till sauce becomes very condensed. You can taste the sauce before serving. If it’s salty, add a little more sugar. 

Pour the sauce over quail eggs.


It just became one of my husband’s favorite dishes.

Homemade Meatball & Meatball Spaghetti 

For meatball:

Minced pork 300g

Egg 1

Salt  1 tsp

Black pepper powder  1/2 tsp

Small onion 1 ( chopped and pan-fried first)

Bread crumbs 40g

Garlic powder 1/2 tsp
Mix all the ingredients in a big bowl by hand.

Then make small meatballs.


Heat a little olive oil in the pan. Fry meatballs till golden brown. Then take them out.


Heat the oil left in the pan. Add in chopped garlic ( 2 cloves) and sauté.

Pour in pasta sauce ( I used around 170 g). And I also added 2 tsp water. Stir well.

Add meatballs in pasta sauce. Turn to low heat and keep stirring till sauce becomes very condensed.

Put cooked spaghetti into sauce. Sprinkle some black pepper granulate and mix well.

Serve with parsley and grate cheese.


My husband loves it very much.

Cheesy Vegetable Chicken Rolls

I found this recipe on Weibo.

1. Prepare a pices of boneless chicken leg. And a larger piece of aluminum foil.

2. Brush foil with olive oil. Then spread chicken on it with skin side down. 

3. Sprinkle some salt on chicken.


4. Put one piece of cheese at one end of the chicken.


5. Put vegetable shreds on it. I chose cucumber, carrot and celery. Spread some corn starch at the rest part of chicken.


6. Roll the chicken from one side to another. Tie it with kitchen twine tightly. And sprinkle some salt and black pepper on the roll.


7. Put chicken roll at one end of foil. Roll the foil up. And tigh two ends.


8. Preheat oven to 200 degree C. Around 30 mins.

9. Heat a little oil in the pan. Put chicken roll in the pan. Fry till skin becomes golden brown.

10. Take off the kitchen twine and cut into small pieces.



Chinese Dumplings

Dumplings are essential to most Chinese during Chinese New Year. I was born and grew up in northern part of China. And dumplings are always one of my favorite food.  

Making dumplings is not very easy but home made dumplings taste much better than the frozen ones bought from supermarket. When I was at home, my family made every part of dumplings, from dumpling skin to  dumpling filling. My dad or my mom or sometimes my sister could chop a big pieces of meat into minced one which is ideal for fillings. And my mom would chop vegetables to match with meat:

Pork with Chinese cabbage.

Pork with celery.

Pork with leek.

Pork with lotus root.

Beef with carrot.

Beef with radish.

Mutton with carrot.

Mutton with radish.

Vegetarian:

Leek with Tofu.

Leek with egg and Tofu.

Leek with vermicelli and Tofu.

Chinese cabbage with Tofu.

Chinese cabbage with vermicelli.

Actually, I don’t know how to make minced meat. So I just bought minced pork from supermarket. Then add in a little chopped spring onion, ginger, soy sauce, salt, black pepper, oyster sauce, seasame oil, and oil. Let the filling rest for a while before using.


Divide the dough into many small pieces. 

Use rolling pin to make them into thin dumpling skins. I don’t like dumpling skins sold in market. Cos when you boil the dumplings, it’s easy for them to get broken. 


Scoop filling onto the center of dumpling skin.


Then press the two ends together tightly.



Dip the bottom of dumplings into flour before place them aside.


Dumplings stuffed with meat needs longer time to be cooked. So have a taste to see if they are cooked before serving.


For the dip, you can try mixed garlic with soy sauce, vinegar, and sesame oil. If you don’t like garlic, you can just mix a little soy sauce, vinegar and sesame oil in a small bowl. Of course, if you want it to be spicy, you can try Chinese famous chili sauce Lao Gan Ma.
Seriously, I can have dumplings everyday without getting tired of them.

Roasted Half Chicken

I found this recipe on Weibo.

Sauce:

Soy sauce 30g

Oyster sauce 20g

Tomato sauce 18g

Sugar 18g

Cooking wine 18g

Minced garlic 10g

1. Mix all the ingredients above in a bowl.

2. Put half chicken in a plastic bag. Then pour the sauce into the bag.

3. Gently massage the chicken to let it be coated with sauce. ( I poked the chicken several times with a toothpick before this step.)

4. Let the chicken stay in sauce bag for hours. Or you can put it in the fridge for overnight.

5. Preheat oven to 180 degree C. Wipe the chicken with kitchen towel. Original recipe said to brush butter onto chicken, but I used olive oil instead. And also sprinkle some black pepper.

6. Put chicken on grilled and roast for 40 mins. If you want the color to be darker. You can turn to 220 degree at the last 5-10 mins.

Dark Braised Trotters 

1. Cut trotters into small pieces.

2. Place trotter pieces in a pot. Pour in enough water covers trotter.

3. Turn on stove and heat till water boils. Take trotter pieces out. Rinse and drain.

4. Heat a little oil in the pan. Put trotter pieces in. Stir fry a bit.

5. Add in a little cooking wine, soy sauce, ginger slices, star anise and several sugar cubes. Then pour in hot water covers all ingredients.

6. Turn to low heat. Cover the pan with lid. Slow cook till water reduces to 1/3.

7. Turn to high heat. Keep stir frying until sauce becomes very condensed.

Seafood Spaghetti 

It’s my husband’s birthday today. I cooked him seafood spaghetti and he loved it.


I couldn’t find fresh mussel in the supermarket nearby, so I bought a pack of  frozen mixed seafood, which contains octopus and clam. I also used fresh prawns.

1. Heat a little olive oil in the pan. Saute a little chopped garlic.

2. Add in octopus and clam. Stir fry for 2-3 mins.

3. Add in peeled prawn. Another 2-3 mins.

4. Pour in pasta paste. I poured in half bottle, which is around 150 g. Simmer for several mins till it boils.

5. Put cooked spaghetti in the sauce and mix well.

6. Sprinkle some fresh parsley and lemon.

Cereal Prawns

One of my husband favorite dishes.

1. Clean prawns and marinate with some salt and cooking wine for around 10 mins.

2. Heat some oil in the pan. I didn’t deep fry those prawns I just pan fried them. Dish them out till the shell turns red. I pan fried them with high heat so that the shell would be crunchy.

3. Melt a small piece of butter in the pan. Add in chopped red chili, spring onion and curry leaves if you have. 

4. Put in cereal. Stir fry for a min or two. Then add prawns back in the pan. 

5. Keep stir frying evenly for a little while. And ready to serve.

Beef Potato Stew

Ingredients:

Beef (cut into slices)

Onion (chopped into shreds)

Potato & carrot ( cut into medium chunk)

Sauce:

Light soy sauce: cooking wine: sugar =3:2:1
1. Heat a little oil in the pan. Put in beef slices and stir fry a bit.

2. Take the beef out in the plate.

3. Add a little more oil in the pan. Put in onion, potato and carrot. Stir fry for 2-3 mins.

4. Add in sauce. Stir fry evenly.

5. Pour in enough hot water covers all ingredients. Also add beef back in the pan.


6. Cover the pan with lid and braise for 20-30 mins till potato and carrot turns softened. Then ready to serve.
