Sweet Chili Sauce Salmon

This is a very simple dish.

1. Marinate salmon with Thai sweet chili sauce in a container for at least one hour. The longer it takes, the better it will taste.

2. Preheat oven to 180 degree C. Line the salmon fillets on the baking paper.

3. Put into oven for 15 mins.


4. Pour a little sweet chili sauce over them and roast for another 5 mins.


5. Sprinkle freshly chopped spring onion and serve hot.

Teppantaki Steak With Vegetables

Sprinkle salt and black pepper over steak and let it rest for 5-10 mins.

Heat cast iron skillet on a stove. Add in a little olive oil.

When skillet is very hot, lay steak in it. Fry each side for around 2 mins.

Cut in a small piece of butter. Also add in 2 or 3 cloves garlic and thyme.

Fry each side for 3 mins. At the same time, use a spoon to scoop melted butter and pour over the uncooked side.

Place steak in a plate and let it rest for a while.

Leave the rest oil in the pan. Put vegetables in skillet. I chose onion, asparagus and mushroom. Stir fry till vegetables turn softened. Add in 1/2 tsp light soy sauce, 1/2 tsp cooking wine and 1/2 tsp sugar. Stir fry for another 2 or 3 mins.

Dish vegetables out in a plate and cut steak into medium chunks and spread them over vegetables.

Onion Potato Soup

Serving: 2

Ingredients:

Half of a small onion

3 small potatoes

Salt 

Black pepper

2 Eggs

Grate Parmesan cheese

1. Use peeler to make onion and potatoes into mince.



In order to stop potatoes turning dark in color, you can pour in some water in the pot.

2. Add in enough water.

3. Turn on low heat. Keep stirring till soup becomes condensed.

4. Sprinkle salt and black pepper.

5. Separate soup into two bowls or cups. Crack an egg into each bowl.


6. Put bowl into microwave and heat for several mins.

7. Sprinkle a little grate Parmesan cheese.



Chicken & Green Onion Stewers

I used chicken breast.

1. Cut chicken breast into one-bite pieces.

2. Marinate chicken with 3 tsp soy sauce, 2 tsp cooking wine, chopped garli (2 cloves), a little chopped ginger, 4 tsp sugar and 1 tsp cornstarch for 10-15 mins.

3. Cut green onion into small pieces similar to the size of chicken pieces.

4. I used toothpick to make two pieces of chicken with green onion in between them.


5. Brush a little oil in the pan. Turn to medium high heat. When the pan is very hot. Put chicken & green onion stewers in.

6. Pan fry each side till golden brown.

Beef Potato Stew

Ingredients:

Beef (cut into slices)

Onion (chopped into shreds)

Potato & carrot ( cut into medium chunk)

Sauce:

Light soy sauce: cooking wine: sugar =3:2:1
1. Heat a little oil in the pan. Put in beef slices and stir fry a bit.

2. Take the beef out in the plate.

3. Add a little more oil in the pan. Put in onion, potato and carrot. Stir fry for 2-3 mins.

4. Add in sauce. Stir fry evenly.

5. Pour in enough hot water covers all ingredients. Also add beef back in the pan.


6. Cover the pan with lid and braise for 20-30 mins till potato and carrot turns softened. Then ready to serve.


Bacon Lasagna 

Because I didn’t have minced beef at home, so I used bacon instead.

Tomato sauce:

1. Heat a little oil in the pan. Add in carrot  , onion and garlic dices. Stir fry till softened.

2. Add in chopped tomato, 2 tsp tomato sauce, a little salt and black pepper. Stir fry evenly.

3. Add in some water. Turn to low heat. Simmer till all ingredients soften and sauce becomes very condensed and dry.

White sauce:

1. Melt 25 g butter in the pan with low heat.

2. Add in 25g flour. Stir slowly.

3. Pour in 200 ml milk and a little nutmeg powder.

4. Keep stirring till sauce becomes very condensed.
Bacon needs to be pan fried a bit.

Lasagna (4 pieces) in boiling water for 7 mins.

Preheat oven to 220 degree C.
Grease baking pan.

Put in 1 piece lasagna and brush tomato sauce. Place bacon and 2 cheese slices. 

Then put in another layer of lasagna. Brush white sauce.

Then another layer of lasagna with tomato sauce, bacon and cheese.

And so on.
The top layer should be tomato sauce. And sprinkle grated cheese over it.

Bake for 30 mins.



Easy Beef/Pork Wellington

My husband wanted to have beef steak, but we didn’t  have any at home. So I cooked Pork Wellington using the recipe of Beef Wellington.

The result was surprisingly good. Pork tested very tender and juicy.

The following is an easy way to cook pork in this way:


1. Season the pork with salt and black pepper.


2. Since the thick steak tests better, I used kitchen twine.


3. Heat some butter in a pan.


4. Put the pork in when the butter is heated. And fry every side of the pork.


5. Frying is done.


6. Stir fry chopped onion, mushroom, and garlic. Add some salt and black pepper powder. ( I don’t have other spices or wine.)


7. Bacon at the bottom, mixture of mushroom and onion in the middle, pork on the top. Do remember to take the kitchen twine off.


8. Roll the pork with bacon and make it a small bun. Wrap it tight and put into fridge for 30 minutes.


9. As to puff pastry, I chose roti prata, which is an easy and quick way.


10. Wrap the pork with roti prata.


11. Put it into fridge for another ten minutes.


12. Preheat oven 200 degree. You can make some decorative pattern on the surface if you want. Then brush it with egg. Put into oven for 20-25 minutes.


13. Dress the dish with some vegetables.

Enjoy your meal!

Spinach & Mushroom Egg


Ingredients:

Spinach ( put in boiling water for several seconds. Take out. Cool and drain. Then chop into small pieces).

Mushroom

1 small onion (chop into shreds)

Eggs 2

Salt

Black pepper

Cummin seed

Garlic 2 cloves ( chopped into granules)

Red chili (optional)

Cheese

1. Heat a little olive oil in the pan. Put in onion, stir fry a bit.

2. Add in mushroom. Stir fry till mushroom turns soft.

3. Put in spinach. Stir evenly.

4. Sprinkle salt, black pepper and cummin seed.

5. Dig two small holes in vegetables. Beat in egg in each hole.

6. Cover the pan with lid for 3 mins.

7. Spread red chili rings, and cover the lid for another 1 min.


8. Dish out in the plate. Sprinkle Parmesan cheese. I also sprinkle some cheddar cheese shreds.

9. In the microwave stove for around 3 mins or till cheese melts.

Spinach Bacon Pizza

For pizza sauce:

Small onion 1 (optional, if you don’t like, you can delete it.)

Butter 15g

Flour 15g

Milk 200g

Salt

Black pepper 

Mixed herbs (optional)

1. Heat butter in the pan. When it melts, put in flour. And quick stir evenly.

2. Add in chopped onion. Stir a bit.

3. Pour in milk. Turn to low heat. Keep stirring till sauce becomes condensed.

4. Sprinkle some salt, black pepper and mixed herbs.


The sauce is done.

I used 250g spinach. Cut off the root and wash clean. Put spinach in boiling water for around 40 seconds. Add in 1 tsp salt. Then take spinach out and drain.

After cooled, squeeze the water out of spinach. Try to squeeze very hard. After squeezing, chop the spinach into small pieces.
Brush the pizza dough with sauce. (Remember to poke pizza dough with fork before this step). Then sprinkle spinach and bacon bits. Last, spread cheese as much as you like.

Preheat oven to 230 degree C. Bake for around 10-12 mins.



My husband loves it.

Creamy Corn Soup

Ingredients:

Butter 20g

Flour 3 tsp

Frozen corn kernels (as much as you like)

Water

Cream 3 tsp

Onion bits

Salt 

Black pepper
1. Heat butter in the pan. When it’s melted, add in flour. Quick cream flour with butter.

2. Add in onion and corn kernels. Stir fry a bit. Pour in water covers all ingredients. Simmer for around 10 mins. (I also add in several shrimps.)

3. Add in cream and stir well. Season with salt and black pepper.


It’s a ideal bread dip.
