Cereal Prawns

One of my husband favorite dishes.

1. Clean prawns and marinate with some salt and cooking wine for around 10 mins.

2. Heat some oil in the pan. I didn’t deep fry those prawns I just pan fried them. Dish them out till the shell turns red. I pan fried them with high heat so that the shell would be crunchy.

3. Melt a small piece of butter in the pan. Add in chopped red chili, spring onion and curry leaves if you have. 

4. Put in cereal. Stir fry for a min or two. Then add prawns back in the pan. 

5. Keep stir frying evenly for a little while. And ready to serve.

Beef Potato Stew

Ingredients:

Beef (cut into slices)

Onion (chopped into shreds)

Potato & carrot ( cut into medium chunk)

Sauce:

Light soy sauce: cooking wine: sugar =3:2:1
1. Heat a little oil in the pan. Put in beef slices and stir fry a bit.

2. Take the beef out in the plate.

3. Add a little more oil in the pan. Put in onion, potato and carrot. Stir fry for 2-3 mins.

4. Add in sauce. Stir fry evenly.

5. Pour in enough hot water covers all ingredients. Also add beef back in the pan.


6. Cover the pan with lid and braise for 20-30 mins till potato and carrot turns softened. Then ready to serve.


Chestnut Bread

Last time when my husband and I went back to my hometown in Shandong, China. I mentioned that I needed some chestnuts to bring back to Singapore for cooking. My auntie kept that in mind and bought me a big box of organic chestnut. I was really surprised. So I brought many packs back to Singapore.

Recently, this chestnut bread just came to my mind. So I tried with those chestnuts full of my family’s love.

Ingredients:

Bread flour 150g

Whole grain flour 100g ( I used rough whole grain flour)

Yeast 6g

Sugar 12 g

Warm water 170ml

Salt 3g

Chestnut ( cooked already. I used many around 200g. They were chopped in blender, not very finely, but roughly)

1. Dissolve yeast in warm water.

2. Mix bread flour, whole grain flour, sugar and salt in a large bowl.

3. Add yeast water in dry ingredients.

4. Knead all ingredients into dough. Keep kneading for 20 mins. That takes a lot energy. 

5. Fold in chestnut.

6. Place dough in a big bowl. Cover with plastic wrap. Let it rise till 2 times as big as before.

7. Knead the dough and press air out. Let it rest for 5 mins.

8. Make the dough into shape you like. I divided it into two smaller ones. Sprinkle some flour. Cover them with plastic wrap and let it rise again till 1.5 times as big as before.

9. Preheat oven to 190 degree C. Bake for 20 mins.



They smell so good. And my husband loves them. 

Very crunchy outside but soft inside.

And I believe they are healthy too.

Crispy Almond Twist

It’s a super easy snack.

Ingredients:

Puff pastry

Egg

Chopped almond or grate almond

Sugar
1. Brush puff pastry with egg.

2. Sprinkle sugar and grate almond over it evenly.

3. Use a rolling pin roll the pastry to press almond and sugar into it. Or you can just use your palm.

4. Flip the pastry over and repeat step 1,2 & 3.

5. Cut pastry into strips. And twist them slightly.

6. Preheat oven to 200 degree C. At the same time, let the pastry rest for around 10 mins.


6. Bake for 15-20 mins. Till they turn golden brown.


Cashew Nut Cookies

It’s a traditional Chinese snack. And it’s very easy to make.

Ingredients:

Butter 100g softened

Sugar 60 g

Egg (half for the dough, half to brush on the dough)

Flour 180g

Baking soda 1/2 tsp

Salt 1 pinch

Cashew nuts some

1. Cream butter with sugar in a bowl.

2. Add in half egg. Stir well.

3. Add in dry ingredients ( flour, baking soda and salt).

4. Knead all ingredients into a dough ball. And refrigerate for 30 mins.

5. Divide the big dough into many small ones. Each is around 8-9 g.

6. Preheat oven to 175 degree C.

7. Brush small dough balls with egg. Then press cashew nut on each one lightly.

8. Brush egg on cashew and dough again.


9. Bake for 20 mins.



They smell so good and taste very nice as well. Very crispy.

Bacon Lasagna 

Because I didn’t have minced beef at home, so I used bacon instead.

Tomato sauce:

1. Heat a little oil in the pan. Add in carrot  , onion and garlic dices. Stir fry till softened.

2. Add in chopped tomato, 2 tsp tomato sauce, a little salt and black pepper. Stir fry evenly.

3. Add in some water. Turn to low heat. Simmer till all ingredients soften and sauce becomes very condensed and dry.

White sauce:

1. Melt 25 g butter in the pan with low heat.

2. Add in 25g flour. Stir slowly.

3. Pour in 200 ml milk and a little nutmeg powder.

4. Keep stirring till sauce becomes very condensed.
Bacon needs to be pan fried a bit.

Lasagna (4 pieces) in boiling water for 7 mins.

Preheat oven to 220 degree C.
Grease baking pan.

Put in 1 piece lasagna and brush tomato sauce. Place bacon and 2 cheese slices. 

Then put in another layer of lasagna. Brush white sauce.

Then another layer of lasagna with tomato sauce, bacon and cheese.

And so on.
The top layer should be tomato sauce. And sprinkle grated cheese over it.

Bake for 30 mins.



Dried Cranberry Shortbread

It’s super easy and delicious.

Ingredients:

1 cup unsalted butter softened

3/4 cup icing sugar

1 tsp vanilla

2 cup flour

1/2 tsp salt

1/2 cup dried cranberries finely chopped
1. Preheat oven to 160 degree C.

2. Mix butter , sugar, vanilla, flour and salt by hand in a bowl till just combined.

3. Fold in dried cranberries.

4. Press dough into baking pan.

5. Bake for 30 mins till pale golden.

6. Cool and cut.




Cinnamon Rolls

I really wanted to try cinnamon rolls before. And I found this amazing recipe:

I halved the batch and also did a bit change.

Ingredients:

For the roll:

4g yeast

1/2 cup milk

1/4 cup sugar

40 g margarine 

1/2 tsp salt

1 egg

2 cup flour ( I used bread flour)

Filling :

1/2 cup brown sugar

1 1/4 tsp cinnamon 

40 g margarine
1. Dissolve the yeast in warm milk in a large bowl.

2. When the foam starts to show up, add in sugar, margarine, salt, egg and flour. Mix them well.

3. Knead the dough into a big ball. Place the dough in a big bowl, cover it with plastic wrap and put in in warm place till it rises 2 times as big as before.

4. Combine brown sugar and cinnamon together to make filling.

5. Roll the dough with rolling pin into a big and thin piece. 

6. Sprinkle softened margarine on the surface. Then sprinkle brown sugar and cinnamon mixture evenly on it.

7. Roll the dough from one eng to the other. 

8. Cut the roll into smaller pieces.

9. Place small rolls in warm place. Cover them with plastic wrap and wait till their size doubles.


10. Preheat oven to 180 degree C. And bake for 20 mins.




Yummy. You can also top with icing you like.

Because I used bread flour, so they are really soft inside.

Stir Fried King Oyster Mushroom

I cooked this dish when I stayed with my family in China during holidays and my family loved it, especially my father.

I used 4 vegetables: garlic ( a little), king oyster Mushroom, carrot and bell pepper.

1. Heat a little oil in the pan. Add in garlic slices and stir fry a bit. Put in carrot slices. Stir fry till carrot turns a bit softened.

2. Add in king oyster Mushroom slices. Stir fry. Water will come from Mushroom. Just keep stir frying till water all gone.

3. Put in bell pepper slices. Stir fry a bit.

4. Add in oyster sauce( I added 1 tsp). Stir fry evenly. If the dish still tastes a bit light, you can add a little salt. If it tastes ok, it’s done.
