Green Bean Wide Vermicelli, Spinach & Egg Stir-fry

I found a pack of green bean wide Vermicelli in a corner at the small supermarket near my home. I was very curious about it, because it’s my first time to see Vermicelli made from green beans. And more surprisingly, it’s from Qufu city, Confucius’s hometown, and it’s also a city next to my hometown. But I have never heard about it before. I really couldn’t control my curiosity, so I bought one pack. 🙂 really want to figure out how this transparent Vermicelli tastes.

I boil 100g green bean wide vermicelli in boiling water for 8 mins according to the instruction on the package. Then take them out and soak in cold water. Drain them.

1. Heat a little oil in the pan. Pour in two beaten eggs. Make scrambled egg. And set egg aside.

2. Heat the pan again. Add in a little oil if needed. Sauté chopped garlic and dried red chili till aromatic.

3. Add in spinach. Quickly stir fry with medium-high heat.

4. Once spinach turns soft and greener, add in green bean vermicelli. Stir fry for 1-2 mins.

5. Add in scrambled egg. Mix evenly.

6. Season with salt and black pepper.

Serve hot.

It’s actually not bad. Green bean vermicelli tastes like very similar to regular vermicelli made from sweet potato. But more chewy.

Curry Pork Chop Rice

I have cooked fried pork chop for many times.

1, sprinkle salt and black pepper over pork chop.

2. Coat pork chop with flour.

3. Dip in egg.

4. Coat them with bread crumbs.

5. Deep fry till golden brown.

For the curry part, I use curry powder.

1. Add 2 tablespoon curry powder in pan.

2. Add in 1/2 cup water and 2 tablespoon honey. I used honey to make it less spicy. If you want it to stay spicy, you can add less honey.

3. Bring to boil. Then reduce to condensed.

Put fried pork chop and rice in a plate. Top rice with a fried egg. Then pour curry sauce over it.

Easy Egg Sandwich

Ingredients:

1 hard boiled egg

2 crispy butter rolls

Mayonnaise

Tomato slices cucumber slices

Butter 5 g

Salt

Black pepper

1. Mash boiled egg in a bowl. Season with salt, black pepper and 1 tablespoon mayonnaise. Mix well.

2. Mix butter with 2 tsp mayonnaise in another bowl.

3. Cut butter rolls with a knife.

4. Brush the cutting surface with Butter mayonnaise mixture.

5. Add in tomato and cucumber slices. And mashed egg at last.

Cocoa Brownie

One day, my husband chose a pack of Starbucks cocoa when we bought groceries in a supermarket. He was super excited because he kept thinking about a warm and yummy cup of cocoa. He immediately made himself a cup of hot cocoa when we reached home. Yet….he found it’s not as yummy as he thought. He always does things like that. At first he’s very excited and can’t wait to buy something but finds it’s not as good as he thought. =_=||

My principle is no wasting food in my kitchen. So I decided to make cocoa into brownies. And my husband is happy because he will feel less guilty in buying something he doesn’t like.

best cocoa brownies


Ingredients:

Butter 140g

Sugar 250g ( if you want it to be less sweet, you can reduce the sugar)

Cocoa powder 65g

Salt 1/4 tsp

Vanilla extract 1/2 tsp

Eggs 2

Flour 65g
Preheat oven to 160 degree C.

1. Combine butter, sugar, cocoa powder & salt in a bowl. Place the bowl in simmering water. Stir till smooth.

2. Set aside to cool down.

3. Add in vanilla and beat in eggs. Mix them well.

4. Add in flour and mix till just combined.

5. Pour batter into baking pan.

6. Bake for 20-25 mins. ( because I used my round shaped baking pan and it’s smaller than the size in original recipe. So it took me longer to get done, about 30-35 mins.)


Very moist and yummy. I love it.

Stir-fry Prawn Hokkien Noodles

The real stir-fry hokkien noodles need squid and pork. But here I didn’t use them. And this recipe is different from the real one. 

1. Beat two eggs in a bowl. Heat oil in the pan and make scrambled egg.

2. Take the egg out. Fry the Prawns till pink and set them aside too.

3. Heat the pan again. Add in chopped garlic and onion. Sauté a bit. 

4. Add the Hokkien noodles in. Stir fry a bit. Add in 2 tsp dark soy sauce, 1 tsp light soy sauce and 1/2 pepper powder. Stir evenly.

5. Put the Prawns back in the pan, also add chopped cabbage and chye sim stem. Stir fry a bit. Pour in 1 cup broth. ( I used the Prawn ribs broth which I made before)

6. Simmer for 5 mins. Add in bean sprouts, chye sim leaves.


7. Add in scrambled egg. Stir fry evenly.


Serve hot. 

My husband loves this dish.

Homemade Onsen Tamago

My husband loves onsen tamago. I tried many times before but failed. I used thermometer this time and finally I succeeded.

Take eggs out from refrigerator and let them to be room temperature.

In a deep pot, pour into enough water that should covers eggs.

When the water temperature reaches 60 degree C, put the eggs into water gently.

Make sure temperature between 60 – 70 degree C. And boil for 30-40 mins. I boiled 37 mins. If the temperature gets higher than 70 degree C, add in a little cold water. You can also put in ice cube. Turn to the low heat or lowest heat of stove, so the temperature can be easily controlled.


When the time is up, soak eggs into cold icing water for a while.

Stir Fry Tofu With Leek

1. Cut Tofu into small chunks.

2. Heat some oil in the pan. Beat an egg in the bowl. Dip Tofu in egg and then fry in the pan till each side turns golden brown. Then take them out in a plate.

3.  Heat a little oil in the pan again. Put chopped leek in the pan. Sauce a bit till they turn softened.

4. Add Tofu back in the pan. Also with chopped chili. Stir fry evenly.

5. Season with salt.

Buttermilk Waffle

Original recipe:

Classic Buttermilk Waffles

I followed the recipe without making any change.
Ingredients:

2 eggs

1 3/4 cup buttermilk

4 tbs melted butter

2 tsp vanilla
1 1/2 cup flour

2 tbs sugar

2 tsp baking powder

1 tsp baking soda

1 tsp salt
1. Mix egg, buttermilk, butter, and vanilla in a big bowl.

2. Mix all dry ingredients in another bowl.

3. Add dry ingredients into wet mixture and stir them till just combine.

4. Heat waffle maker, and scoop batter into it.

5. Serve with maple syrup or butter.

Onion Potato Soup

Serving: 2

Ingredients:

Half of a small onion

3 small potatoes

Salt 

Black pepper

2 Eggs

Grate Parmesan cheese

1. Use peeler to make onion and potatoes into mince.



In order to stop potatoes turning dark in color, you can pour in some water in the pot.

2. Add in enough water.

3. Turn on low heat. Keep stirring till soup becomes condensed.

4. Sprinkle salt and black pepper.

5. Separate soup into two bowls or cups. Crack an egg into each bowl.


6. Put bowl into microwave and heat for several mins.

7. Sprinkle a little grate Parmesan cheese.



Easy & Yummy Quail Egg

First, boil quail eggs in boiling water for 5 mins. 

Then take them out and soak in cold water.

After they are completely cool, Gently remove the shell. 

Put quail eggs in the plate. Next step is to prepare sauce.

Heat pan on stove. Add in a little tsp oyster sauce, light soy sauce, sugar and water. Keep stirring till sauce becomes very condensed. You can taste the sauce before serving. If it’s salty, add a little more sugar. 

Pour the sauce over quail eggs.


It just became one of my husband’s favorite dishes.
