Cocoa Brownie

One day, my husband chose a pack of Starbucks cocoa when we bought groceries in a supermarket. He was super excited because he kept thinking about a warm and yummy cup of cocoa. He immediately made himself a cup of hot cocoa when we reached home. Yet….he found it’s not as yummy as he thought. He always does things like that. At first he’s very excited and can’t wait to buy something but finds it’s not as good as he thought. =_=||

My principle is no wasting food in my kitchen. So I decided to make cocoa into brownies. And my husband is happy because he will feel less guilty in buying something he doesn’t like.

Ingredients:

Butter 140g

Sugar 250g ( if you want it to be less sweet, you can reduce the sugar)

Cocoa powder 65g

Salt 1/4 tsp

Vanilla extract 1/2 tsp

Eggs 2

Flour 65g
Preheat oven to 160 degree C.

1. Combine butter, sugar, cocoa powder & salt in a bowl. Place the bowl in simmering water. Stir till smooth.

2. Set aside to cool down.

3. Add in vanilla and beat in eggs. Mix them well.

4. Add in flour and mix till just combined.

5. Pour batter into baking pan.

6. Bake for 20-25 mins. ( because I used my round shaped baking pan and it’s smaller than the size in original recipe. So it took me longer to get done, about 30-35 mins.)


Very moist and yummy. I love it.

Stir-fry Prawn Hokkien Noodles

The real stir-fry hokkien noodles need squid and pork. But here I didn’t use them. And this recipe is different from the real one. 

1. Beat two eggs in a bowl. Heat oil in the pan and make scrambled egg.

2. Take the egg out. Fry the Prawns till pink and set them aside too.

3. Heat the pan again. Add in chopped garlic and onion. Sauté a bit. 

4. Add the Hokkien noodles in. Stir fry a bit. Add in 2 tsp dark soy sauce, 1 tsp light soy sauce and 1/2 pepper powder. Stir evenly.

5. Put the Prawns back in the pan, also add chopped cabbage and chye sim stem. Stir fry a bit. Pour in 1 cup broth. ( I used the Prawn ribs broth which I made before)

6. Simmer for 5 mins. Add in bean sprouts, chye sim leaves.


7. Add in scrambled egg. Stir fry evenly.


Serve hot. 

My husband loves this dish.

Homemade Kimchi

I love Chinese cabbage. I also love spicy food. There is no reason for me not to love kimchi. Kimchi can be easily bought from supermarket. Yet, I still want to try to make it by myself.

1. Prepare a head of Chinese cabbage. Remove the root. 

2. Cut cabbage into 4 part. And rinse under water. Clean each leaf.


3. Sprinkle salt ( I used sea salt) onto each layer. Let it rest for 2-3 hours.

4. In saucepan, pour into 1 cup water. Add in 2 tablespoon glutinous rice powder. Heat and stir at the same time. When the glutinous Rice powder dissolved, add in chili powder. You can taste when you add it. Stop when you think it’s spicy enough. Stir evenly.

5. Off the stove, add minced garlic, minced ginger, minced 1/2 pear and minced 1/2 apple. Mix them well.


The chili sauce is done.

6. Pour the water come from cabbage out. Rinse cabbage with water to wash the salt away. And squeeze the Chinese cabbage very hard.

7. Put the cabbage in a clean container. Spread chili sauce evenly on each layer of cabbage.


Finish with all the Chinese cabbage.


Make a label on the container with the date on it. 


You can have it after 3 days. Love it!


Good to go with BBQ pork or gyoza.

Spare Ribs Soup ( With Red Dates & Ginkgo)

1. Rinse spare ribs in water.

2. Put ribs in a deep pot. Add in enough water higher than ribs.

3. Turn to high heat. When water boils, skim it. 

4. Turn to low heat. Add in 2 or 3 red dates. 

5. Cover the pot with lid. Let it slow cook for at least 40 mins. I let it boil for 1.5 hrs. The meat will become very soft and come off from the bone very easily.

6. Add in ginkgo. I read on internet that it could be poisonous if you have too many ginkgo one time. So I just put in 10 ginkgoes. And boil for another 15 Mins.


Serve hot.


You can also sprinkle a little spring onion.

Homemade Onsen Tamago

My husband loves onsen tamago. I tried many times before but failed. I used thermometer this time and finally I succeeded.

Take eggs out from refrigerator and let them to be room temperature.

In a deep pot, pour into enough water that should covers eggs.

When the water temperature reaches 60 degree C, put the eggs into water gently.

Make sure temperature between 60 – 70 degree C. And boil for 30-40 mins. I boiled 37 mins. If the temperature gets higher than 70 degree C, add in a little cold water. You can also put in ice cube. Turn to the low heat or lowest heat of stove, so the temperature can be easily controlled.


When the time is up, soak eggs into cold icing water for a while.

Easy Meatball Cabbage Soup

First, boil stock ( I used chicken soup left before) in a deep pot.

When the soup boils, add meatballs in. Boil with low or medium heat for around 20 mins. Then add in cabbage and boil for another 10 mins. Season with some salt and serve.

Homemade Tomato Sauce

Apart from searching for recipes, one of my hobbies is watching movies about food.

I watched the Japanese Movie Little Forest the other day. It tells a story of a little girl living in the countryside. She plants vegetables and fruits and makes dishes with them. One scen is about her making tomato sauce with the tomatoes she plants. So I imitated her way of doing that.

1. First, wash some cherry tomatoes. Actually, you can use small tomatoes or big ones, depending on how big your jar is. And cut a cross at the bottom of each one.


2. Then put them in hot water for several seconds. If your tomatoes are bigger, let them stay longer in hot water.


3. Put them into icy water. And the tomato skin can be easily removed.


4. Put peeled tomatoes back into hot water. Boil them with a little salt. Don’t put too much. 


5. Then put the tomatoes along with some salty hot water into sterilized jar. Please don’t make the jar too full. 


6. Put the jar into hot water. And boil it for several minutes. Make sure the lid is not cover too tight.


7. After boiling, cool the jar for a while and tighten the lid.

The movies says, put the jar in the fridge. When you feel hot in summer, you can take a bite, and it makes you feel very cool.


I took them out and heat in a pan with some sugar.

Then poured them on cooked spaghetti. It tasted really great.

Homemade Lemon Orange Jam

I used 1 lemon, 2 oranges, 1600ml water as said in original recipe. But I reduced sugar. I used only 600g sugar, and it turned out very sweet to me.

1. Use a slicer to make lemon & orange peel into short strips.


2. Cut lemon and orange into small pieces. ( I took off all the white parts)

3. Put all the peel and pulp in a large bowl, add in 1000ml boiled water for overnight.

4. Put all the peel, pulp and water in a pot large enough for another 600ml water. 

5. Turn on the stove and heat with low heat till the water in the pot reduces to half and peel turns softened.

6. Add in sugar and turn to high height. Keep stirring.

7. Water in the pot will become less and condensed. Take out a few drops in a plate to test their mobility. If the drops don’t flow well, then it’s done. You need to test many times, just please be patient.

8. Put them in sterilized jars. 

The Chinese label was written by me. 🙂

柠檬 “Ning meng” means lemon.

橙子 “Cheng zi” means orange.

酱 “jiang” means jam or sauce, depending on the text.

日期 “ri qi” means date.

I almost spent the whole morning making this jam. And tested many many times. I’m glad the jam tastes so good. 

It can be used as bread spread or to make fruit tea.

Crispy Fish Fillet (Non-fry)

I don’t like cooking dishes that need deep fried, because it means greasy kitchen, wasting too much oil, and getting hurt by hot oil easily. 

My husband like fish & chips very much, and both the dishes need deep frying. I looked up on the Internet and found ways to cook them without frying. 


This was the fish fillet I used. A dory fish fillet. Season it with salt and black pepper granules.


Bread crumbs need to be stir fry with a little oil for a while, which will make them look bright golden and taste better.


I also added some mixed herbs and minced garlic. When the color turns golden, turn off the oven.


Fish fillet first covered with a thin layer of flour, then egg, and bread crumbs at last.

Preheat oven to 200 degree C. In the oven for 20 minutes.



Dresses with some vegetable salad.


Fish fillet inside is very tender.
