Chinese Fried Spring Onion Pancake


If you ask me what are the food I miss most in my hometown, fried spring onion is definitely one of them.

It’s not hard to make. But I never make the ones as good as my mom makes.

1. Mix flour with some warm water. Make it a round dough and cover with plastic wrap for around 20 mins to let water and flour mix well. My mom told me I should add in some oil too. Or the pancake will taste a bit dry. Turns out she’s true.

2. Divide dough into several evenly-sized small ones.

3. Use a rolling pin to make small dough big and thin. 

4. Spread oil, salt, black pepper and chopped spring onion on it evenly.


5. Roll it from one end to the other.



6. Roll it up from one end to the other.


7. And use rolling pin to make it a little flatter.


8. Fry in pan till both side golden brown.


I think my mom is right. It taste a bit dry. Maybe I should’ve add fold in some oil in dough.

Blueberry Pancake By Oven

It’s a special way to make pancake, because oven is used instead of pan.

I made some change according to the original recipe above:  

Since I don’t have any weighing machine, I am not sure the accurate weight of all the ingredients I used.

Part A: 

Flour around 80g

Sugar around 30g

Baking soda 1 tsp

Salt 1/8 tsp

Mix all of them well.

  
Part B:

Egg 1

Milk around 150g

Yogurt around 25g

Oil ( I used canola oil) around 25g

Vanilla esscence 1 tsp

Mix them well.
 

1. Pour Part B into Part A. Stir till no flour can be seen.

2.Add some blueberries. Stir again.  

3.Preheat oven with 190 degree C. Before put into the oven, spread some blueberries on the surface of batter. Bake for 45 minutes.

Blueberries will burst and the house is full of fragrance. 
 

  

You can spread some icing sugar if you want.

  


Maple syrup will make it taste better.

Fish & Potato Chips


My husband is a big fan of fish and chips. So I tried to cook this dish at home.
I cooked two kinds of fried fish fillet.
First, cut fish fillet into smaller size. And marinated with a little salt and black pepper.


1st. In a bowl, mix a small bowl of flour, 1/2 tsp salt, 1/2 tsp baking soda, 1 tsp vinegar and a small bowl of water. Stir well into batter.
Dip fish in batter. Then fry till golden brown.


2nd. Coat fish with a thin layer of flour, than egg and bread crumb at last.
Fry in oil till golden brown.
After tasting this two kinds of fried fish, I like the bread crumb one more. Because I think it tastes more crispy. But my husband loved them both.


Potato chips fried in oil for around 5-7 minutes, till they get golden brown.

Easy Braised Chicken With ShiitakeΒ 

This dish is actually similar to yellow chicken stew. Yellow chicken stew is really popular in China. I guess there are yellow chicken stew restaurants in every China’s city.

It’s a dish made mainly of chicken, shiitake and green bell pepper.

I cooked it in a relatively easy way.

1. Cut boneless chicken leg into medium pieces. You can use other chicken parts, but I don’t recommend chicken breast.

2. Heat some oil in the pan. Put in chicken, stir fry till chicken gets a little golden brown on the edge.

3. Add in carrot and shiitake slices. Stir fry for a while.

4. Add in 1 tsp light soy sauce, 1 tsp dark soy sauce and 1 tsp sugar. Stir fry evenly.

5. Pour in enough water covers all ingredient. Cover the pan with lid and use low or medium heat.

6. Before the sauce in pan is almost dry. Put in bell pepper pieces, and turn to high heat.

7. Keep stir frying till sauce is dry.


It’s an ideal match for rice.

If you want it to be spicy, you could add a little dry red chili at first.

Roast Chicken/Duck

I guess many people know Beijing Roast Duck. Crispy roast duck is popular in China. Duck meat will be cut into slices, and wrapped with cucumber strips and sweet bean sauce. I can eat a lot. 

It should be crispy roast duck, but I only found big ducks in supermarket. So I decided to try with a small chicken.

1. Pour hot boiled water onto whole chicken.

2. Use a bottle ( with water inside) to make chicken stand and dry it. The chicken’s skin will become tightened and bright.


Oh! Poor chicken. 😦

Later you will suffer heated roasting. Please cool as much as you can now.

It will take hours till chicken’s surface is completely dry. So I used a fan to blow directly at the chicken. 

3. Prepare the mixed sauce to brush chicken.

Vinegar: 1 tsp

Cooking wine: 2 tsp

Honey: 2 tsp

Water: 2 tsp ( said in original recipe, but I forgot)

4. When the chicken is totally dry. Brush the mixed sauce onto the skin evenly and completely. Then dry it.

5. After chicken’s skin becomes dry, brush again. Dry it.

6. Stuff chicken with Apple chunks ( wet bun also used in original recipe, but I didn’t use it). And close chicken’s bottom with toothpicks.


7. Preheat oven to 200 degree C. Put chicken on the grill with breast side up. Under the grill put a baking pan covered with aluminum foil and filled with a little water.

8. Roast with 170 degree C for 40 mins. Then flip chicken over and roast for 20 mins. ( after totally roasted 60 mins, I found the chicken’s color is still a little light, so I roast it for another 20 mins, with the breast side up. And I also took all the apple chunks out.)


After it’s done, take it out and cut into small pieces, which I am not good at.



Then wrap chicken slices with cucumber and sweet bean sauce. Hmmm, so yummy.

I still think I didn’t dry it longer enough. The skin could be more crispy. But the chicken is tender inside. Very delicious. 

Tomato Beef Stew

This dish will take over one hour.

1. Cut beef into medium cubes.

2. Put beef cubes in the pan with cold water and turn on the stove.

3. When the water gets boiled, there will be a lot foam.

4. Take beef cubes out and clean them.

5. Heat the oil in the pan, put in ginger slices and some garlic slices.
6. Add in beef cubes. And stir fry for a while.

7. Then put in a little cooking wine and light soy sauce. Stir evenly.

8. Add in enough hot water over the beef. Then cover the pan with lid and cook for at least 40 mins.
9.Three tomatoes need to be peeled off. First cut a cross at the bottom. Then put them in hot water for around 1 minute. Lastly, remove them into cold water. And it will be easy to peel them off.
10. Chop them into small bits.
11. Use another pan. Heat the oil and put the tomato bits in.
12. When the tomato juice comes out, pour in a bowl of water. 
13. Keep stirring till the tomato sauce becomes a little condensed.
14.When 40mins is over, add tomato sauce into the beef along with several sugar cubes and some salt.
15. Cook for another 30 mins.


If you don’t feel like eating anything, this dish will make your appetite better.

Crispy Fried Chicken


I seldomly cook deep fried food, because it wastes too much oil, and the kitch will become greasy.

So when I prepared for this dish, I really thinker very hard to use oil as less as I can.

1. Cut chicken into small pieces. I made them one-bite size. And I chose boneless chicken leg.

2. Marinate chicken with minced garlic & Ginger, a little salt and black pepper powder and cooking wine. For about 15 minutes.

3. Coated chicken with egg and then frying powder.

4. Heat oil in a small pot. I just add oil half height of the chicken piece. Try the heat with a chopstick, if there are many small bubbles showing up around the chopstick, it means the oil’s heat is OK!

5. Start frying till the surface turns golden brown.


Just marinate with a little salt. Cos I forgot salt already exists in frying powder. So my fried chicken is a bit salty. But it’s crisp.

Oatmeal Chocolate Chip Cookies


The first time one of my students gave me one piece of this cookie, I fell in love with it immediately. The second time she gave me another one, I couldn’t help it and asked her for the recipe. Then her auntie, a very nice lady, gave me the recipe. I still remember how excited I was that day.

I changed a bit according to the original recipe.

Ingredients:

Butter 120 g

Brown sugar 100 g

White sugar 100 g

1 egg

1/2 tsp vanilla

140g flour

1/2 tsp baking soda

1/4 tsp salt

1.5 cup oats

1/4 cup chocolate chips
1. In a large bowl, cream butter with brown sugar and white sugar. Stir smooth.

2. Beat in egg and vanilla.

3. Add in flour, baking soda, salt. Stir into creamed mixture.

4. Add in oats and chocolate chips.


5. Preheat oven to 175 degree C, bake for 10 minutes.


My husband loves them!

Moo Shu Pork (Fried Pork With Scrambled Eggs And Fungus)


I think many people are very familiar with this Chinese dish. The first time I saw this dish’s name on the menu, I was surprised. Because its Chinese name is “ζœ¨ι‘»θ‚‰”( mu Xu Rou), while “mu” means wood, ” Xu”means beard. I was like what kind of dish is that! πŸ™‚

But it turned out to be a delicious dish with pork, egg, carrot, black fungus and cucumber. 

It’s not a difficult dish to cook.

Ingredients:

Pork ( cut into pieces, marinate with a little salt, light soy sauce, and starch for 10 or 15 minutes)

Eggs (2 or 3)

Black fungus ( if you use dry ones, please soak them in water for several minutes. Please note that black fungus soaked in water for a long time could be poisonous, so just several minutes is fine. Romove their bottoms, and tear them into small pieces with hands)

Carrot ( chopped into pieces)

Chopped Celery ( because I didnt have cucumber, so I use celery instead. Cucumber would be better. )

Oil, salt, starch, water, sugar, chopped garlic (optional)

1. Make omelet. Take the omelet out once they solidify.


2. Heat a little more oil in the pan. Put the marinated pork slices in. Stir fry till they get brown and take out.

3. If there is no oil in the pan, add in a little. Put in the garlic, then carrot. Stir fry for around 2 minutes, then add in celery (or cucumber ). Stir fry for another minute or two. 

4. Put in pork and black fungus. Stir fry for 1-2 minutes.

5. Add in salt, light soy sauce and sugar. Stir fry evenly.

6. Put into the omelet. Stir evenly with the other ingredients.

7. At last pour in a little starchy water and quick stir fry for a minute.


Ready to serve.

Braised Chicken in Brown Sauce


This dish is perfect for rice. 

1. Prepare a boneless chicken leg. 

2. Heat the pan. ( no oil is needed here, because chicken leg contains fat. )

3. Put the chicken leg into the pan with the skin side down. The fat will come out. When the down side is a little burnt, flip it over and fry the other side.

4. After both sides turn golden color. Add in dark soy sauce, some sugar and water. Cover with the lid.

5. When the sauce becomes much less, remove the lid. Spread some black sesame. 

6. Turn up the heat. Keep stirring to avoid being burnt. The sauce will become less and more condensed. Make sure the chicken coated with sauce evenly.

7. When the sauce is almost dry, turn off the heat.

8. Cut chicken into slices and put them on rice.


Brown sauce also makes rice yummy.
