Stir-fry Prawn Hokkien Noodles

The real stir-fry hokkien noodles need squid and pork. But here I didn’t use them. And this recipe is different from the real one. 

1. Beat two eggs in a bowl. Heat oil in the pan and make scrambled egg.

2. Take the egg out. Fry the Prawns till pink and set them aside too.

3. Heat the pan again. Add in chopped garlic and onion. Sauté a bit. 

4. Add the Hokkien noodles in. Stir fry a bit. Add in 2 tsp dark soy sauce, 1 tsp light soy sauce and 1/2 pepper powder. Stir evenly.

5. Put the Prawns back in the pan, also add chopped cabbage and chye sim stem. Stir fry a bit. Pour in 1 cup broth. ( I used the Prawn ribs broth which I made before)

6. Simmer for 5 mins. Add in bean sprouts, chye sim leaves.


7. Add in scrambled egg. Stir fry evenly.


Serve hot. 

My husband loves this dish.

Homemade Kimchi

I love Chinese cabbage. I also love spicy food. There is no reason for me not to love kimchi. Kimchi can be easily bought from supermarket. Yet, I still want to try to make it by myself.

1. Prepare a head of Chinese cabbage. Remove the root. 

2. Cut cabbage into 4 part. And rinse under water. Clean each leaf.


3. Sprinkle salt ( I used sea salt) onto each layer. Let it rest for 2-3 hours.

4. In saucepan, pour into 1 cup water. Add in 2 tablespoon glutinous rice powder. Heat and stir at the same time. When the glutinous Rice powder dissolved, add in chili powder. You can taste when you add it. Stop when you think it’s spicy enough. Stir evenly.

5. Off the stove, add minced garlic, minced ginger, minced 1/2 pear and minced 1/2 apple. Mix them well.


The chili sauce is done.

6. Pour the water come from cabbage out. Rinse cabbage with water to wash the salt away. And squeeze the Chinese cabbage very hard.

7. Put the cabbage in a clean container. Spread chili sauce evenly on each layer of cabbage.


Finish with all the Chinese cabbage.


Make a label on the container with the date on it. 


You can have it after 3 days. Love it!


Good to go with BBQ pork or gyoza.

Ribeye Steak

My husband wanted to have steak for dinner. So we went to supermarket to buy a ribeye steak and some sausage.

1. Sprinkle salt and black pepper over the steak.

2. Heat skillet on stove. Add a little olive oil.

3. When the skillet is smoking hot, put the steak in. You will hear the sizzling.

4. For 2-3 mins, the down side will becom brownish. Turn over to fry the other side.

5. Cut in a little butter. Put in 2 cloves garlic and some thyme.

6. Use a spoon to pour melted butter over the steak. Let the steak stand to fry the edge.

Place the steak into a plate. 

Use the same skillet ( no need to wash it) to fry sausage.


Serve with some boiled broccoli.

The steak is very tender and juicy.

Red Bean Bun


I’m a red bean fan. I love almost everything about red bean. This red bean bun needs red bean paste. I used the one bought from supermarket.

Ingredients:

Bread flour 200g

Sugar 18g

Salt 2.5g

Yeast 3g

Butter 15g

Water 100-120g

Red bean paste 300g
1. Mix flour, sugar, salt, and yeast in a bowl.

2. Pour water in and stir with chopsticks at the same time. 

3. Knead all ingredients into a dough.

4. Cut butter in. Keep kneading till butter is fully absorbed.

5. Put dough in the bowl. Wrap with plastic and let it rise till 2 times big.

6. Press the air out and divide dough into 6 small balls.

7. Press each ball flat. Put a red bean ball (50g) in the center. Wrap it up. Then place red bean buns on a baking pan. Into the oven with a big bowl of hot water under it.

8. Let it rise till 1.5 times big.

9. Preheat oven to 190 degree C. Sprinkle black sesame on the bun. Place a pan on the top of them to press them a bit.


In the oven and bake for 18 mins.


A little crispy outside but really soft and sweet inside. I love them.

Spare Ribs Soup ( With Red Dates & Ginkgo)

1. Rinse spare ribs in water.

2. Put ribs in a deep pot. Add in enough water higher than ribs.

3. Turn to high heat. When water boils, skim it. 

4. Turn to low heat. Add in 2 or 3 red dates. 

5. Cover the pot with lid. Let it slow cook for at least 40 mins. I let it boil for 1.5 hrs. The meat will become very soft and come off from the bone very easily.

6. Add in ginkgo. I read on internet that it could be poisonous if you have too many ginkgo one time. So I just put in 10 ginkgoes. And boil for another 15 Mins.


Serve hot.


You can also sprinkle a little spring onion.

Fried Burdock 

I used to think burdock can be only used as tea or medicine herbs. I never thought it could be cooked as usual vegetables.

Burdock is very good for health. This dish is very simple. Just rinse burdock in water, remove the peel. Then cut into think slices. Thin slices are easy to cook and will be very crunchy. Dust burdock slices with flour. 

Heat oil in the pan. Fry burdock slices till both sides turn golden brown.


No need to add any seasoning. Burdock tastes a bit sweet itself.

Ladyfinger Omelet

Actually I don’t like ladyfinger very much. Because it is sticky inside, which tastes a bit weird to me. But I like ladyfinger omelet.

Two ladyfingers removed off two ends and put into boiling water for 1-2 minutes. Put some salt in the water.

Beat 3 small eggs in a bowl.

Heat a little oil in the pan. Pour the egg in and spread one layer in the pan. When egg starts to solidify, put one ladyfinger at one end of the pan. Then roll the egg with ladyfinger in it to the other end of the pan. 

Pour egg into the pan. One ladyfinger put next to the omelet already made. Then roll them together to the other end. 

Repeat the procedure above till all egg used up.


It will become a big omelet and cut it into small pieces.

Carrot Cake

This is an easy recipe to bake carrot cake.

Ingredients:

Canola oil: 180 ml

White sugar: 100g

Brown sugar: 50g

Eggs 2

Flour: 140g

Baking soda: 1 tsp

Salt: 1 tsp

Carrot strips: 2 medium carrots

Cinnamon ground: 1 tsp

Vanilla: 1/2 tsp
1. In a large bowl, mix oil and sugar, mix them well.

2. Beat in eggs. Stir well.

3. Add in flour, baking soda and salt. Mix well.

4. Then add in carrot, cinnamon and vanilla.

5. Put batter in the pan.

6. Preheat oven to 180 degree C and bake for 30-35 mins.

Tomato & Potato Soup


It’s a very easy soup.

Ingredients:

A little garlic and ginger granules.

3 medium tomatoes ( peeled and chopped into small pieces)

5 small potatoes ( peeled and chopped into small pieces)

Salt, 1 tsp sugar, black pepper powder, 1 tsp cream (optional), water.

1. Heat a little oil in the pan, and put garlic and ginger in. Stir fry a bit.

2. Put all the tomato pieces and potato pieces in. Stir fry a little.

3. Add in water cover all ingredients. Then turn to low heat, and cover the pan with lid.

4. Simmer till potato softened and soup condensed. 

5. Add in cream and sugar. Stir evenly. Last put in salt and black pepper powder.


It goes well with homemade bread.

Quick Meal With Baguette

When I get home from work tried and hungry, I really don’t feel like cooking. Yet I don’t like eating outside so I have to figure out some quick and easy ways to solve the problem about food.

One of my hobbies is searching recipes that I think worth trying. Of course, I also keep an eye on those that can help me handle a meal within several minutes.
The other day I tried the following recipes with baguette. They turned out not bad and my husband loved them.

Mix melted butter with minced garlic and mixed herbs. Spread the mixture on the surface of baguette slices. Bake for 5 mins with 220 degree C. Easy and simple.


Baguette can also be used for sandwich. Cut a medium slice open in the middle. Add in the meat and vegetables you like. Then it’s done. You can also put in salad, or whatever you like.

This is my husband’s favorite. Put the scrambled egg on the surface of sliced baguette, and top with cheese slice. Put into the microwave oven for 1 or 2 minutes till the cheese is melted.
