Oven Roasted Fish

1. Cut fish 2 or 3 times on both sides.

2. Put fish into a big bowl, add in 2 tablespoon cooking wine and several ginger slices. Marinate for half an hour.

3. Wipe fish dry with kitchen towel.

4. Sprinkle salt and white pepper over fish.

5. Heat 2-3 tablespoon oil in the pan. Add in 3 tablespoon chopped garlic, 1/2 tablespoon chopped ginger, and 1 tablespoon chopped dried chili. Fry with low heat till aromatic.

6. Add in 1 tablespoon Pixian soy bean sauce. Stir fry till aromatic.

7. Add in 1/2 tablespoon sugar. Stir evenly.

8. Place vegetables you like in the baking pan. I chose enoki mushroom, celery and onion.

9. Place fish over vegetables. Pour the sauce over fish and vegetables.

Into the preheated oven (180 degree C) and bake for 15 mins. Flip the fish over and bake for another 15 mins.

Pineapple Rice

I bought a whole pineapple from supermarket. Cut at the 1/3 height. Use knife and spoon to scoop the pineapple out. Set the pineapple shell aside. Cut the pineapple into small chunks.

I also used a pineapple rice paste bought from supermarket.

1. Clean Prawns. Take off the head and shell.

2. Heat a little oil in the pan. Fry the Prawn head and shell. Then discard them.

3. Sauté sausage dice and Prawn for around 3-5 mins till Prawns turn red.

4. Add in cooked rice and paste. Quickly stir fry for 2-3 mins.

5. Add in pineapple chunks and thawed vegetables ( I used frozen green peas). Stir fry for another 3 mins.

6. Place fried rice into pineapple shell. And serve hot.

Prepare a Christmas Feast with a King Crab

Yesterday when my husband and I were buying groceries in a supermarket, we noticed there was sale of king crab. Turkey is too big for us to have for Christmas, so a king crab sounds a good idea.

Today when I got up, the first thing I needed to do is to defreeze the king crab we bought. Then I disassembled it into several parts.

For the central body, I took the Shell off. Then picked the meat out. Heat a pan, melt a small piece of butter. Put the meat in. Sauté a bit. Add in 1 tablespoon flour. Quickly stir. Then add in 3-4 tablespoon milk. Stir slowly and evenly to let it reduce to white sauce. Put the crab meat white sauce into the shell. Sprinkle cheese. Put into oven ( 200 degree C, 8-10 mins) or till cheese melts.

Crab legs can be divided into three parts: thigh (fat end), middle parts and thin end parts.

For the fat thigh, I used them to cook spaghetti:

Heat a piece of butter in the pan. When melted, add in crab leg. Stir fry a bit. Then add in chopped garlic. Stir till aromatic. Pour in a little white wine. Simmer a little. Season with salt and black pepper. Add in chopped parsley and cooked spaghetti. Quickly stir evenly.

For the middle crab leg parts, I roast them with garlic butter. Put a small chunk of butter in a bowl. Add in chopped garlic, a little salt and pepper. Blend well. Cut half the shell off ( or even less). Then spread garlic butter onto meat. Put into oven. 180 degree C and 20 mins.

For the thin ends, I cut them into smaller pieces. Marinate with a little cooking wine and corn starch. Heat a little olive oil in the pan. Put the crab leg pieces in. Stir fry for 2-3 mins. Add in chopped ginger and spring onion. Quickly stir fry. Add in a little cooking wine, light soy sauce and oyster sauce. Quickly blend evenly and serve hot.

For the claws, I used them to cook light soup. Put crab claws, corn pieces, Chinese yam, mushroom, ginger shreds and spring onion pieces into a pot. Pour in 1 1/2 bowls of water. Turn to high heat. When water boils, put in salmon slices. Turn to middle heat and cook for 3 mins. Add in 1 tsp sweet cooking wine and salt. Cook for another minute.

And that’s it. Our Christmas feast made by a king crab.

Stir-fry Prawn Hokkien Noodles

The real stir-fry hokkien noodles need squid and pork. But here I didn’t use them. And this recipe is different from the real one. 

1. Beat two eggs in a bowl. Heat oil in the pan and make scrambled egg.

2. Take the egg out. Fry the Prawns till pink and set them aside too.

3. Heat the pan again. Add in chopped garlic and onion. Sauté a bit. 

4. Add the Hokkien noodles in. Stir fry a bit. Add in 2 tsp dark soy sauce, 1 tsp light soy sauce and 1/2 pepper powder. Stir evenly.

5. Put the Prawns back in the pan, also add chopped cabbage and chye sim stem. Stir fry a bit. Pour in 1 cup broth. ( I used the Prawn ribs broth which I made before)

6. Simmer for 5 mins. Add in bean sprouts, chye sim leaves.


7. Add in scrambled egg. Stir fry evenly.


Serve hot. 

My husband loves this dish.

Homemade Japanese Sukiyaki Pot

My husband and I tried sukiyaki pot while in Hokkaido. We both loved it.


That one required dipping in raw egg. Really delicious.

Japanese sukiyaki pot is different from shanushabu. It needs sukiyaki sauce, which I bought from a Japanese supermarket.


Prepare pork slices or beef slices.


And vegetables.


Pour sukiyaki sauce in a pot. I chose to use my skillet. When sauce boils, put in meat and vegetables. I also put in Tofu.


Boil a while till all ingredients are cooked.


Serve hot.

Beetroot Soup

Ingredients:

1 onion chopped

1 potato peeled and chopped

1 small beetroot chopped

1 medium carrot chopped

3 clove garlic minced

2 tsp butter

A little chopped cabbage

Black pepper

Salt

4 tsp tomato sauce

1 box broth

200 ml water
1. Melt butter in the pot. Add in chopped onion and sauté a bit.

2. Add in carrot and beetroot. Stir fry for about 3 mins.

3. Pour in tomato sauce, broth and water. Cover the pot with lid. Boil for 10 mins.

4. Add in potato, garlic, cabbage and a little bay leaf. Put on the lid and boil for another 30 mins.

5. Sprinkle salt and black pepper to season.



Serve with baguette.

Easy, Healthy Roasted Pumpkin

I love pumpkins. They are sweet, soft and healthy. This way of cooking them just keep their original flavor.

1. Preheat oven to 200 degree C.

2. Clean pumpkin and remove the seeds. Cut them into smaller pieces.

3. Place them in baking pan. Roast for 30 mins.

4. Sprinkle a little cinnamon powder if you like. And roast for another 5-10 mins.

5. Place them in plate. Spread a little salt to strengthen their sweetness.

Teppantaki Steak With Vegetables

Sprinkle salt and black pepper over steak and let it rest for 5-10 mins.

Heat cast iron skillet on a stove. Add in a little olive oil.

When skillet is very hot, lay steak in it. Fry each side for around 2 mins.

Cut in a small piece of butter. Also add in 2 or 3 cloves garlic and thyme.

Fry each side for 3 mins. At the same time, use a spoon to scoop melted butter and pour over the uncooked side.

Place steak in a plate and let it rest for a while.

Leave the rest oil in the pan. Put vegetables in skillet. I chose onion, asparagus and mushroom. Stir fry till vegetables turn softened. Add in 1/2 tsp light soy sauce, 1/2 tsp cooking wine and 1/2 tsp sugar. Stir fry for another 2 or 3 mins.

Dish vegetables out in a plate and cut steak into medium chunks and spread them over vegetables.

Cheesy Vegetable Chicken Rolls

I found this recipe on Weibo.

1. Prepare a pices of boneless chicken leg. And a larger piece of aluminum foil.

2. Brush foil with olive oil. Then spread chicken on it with skin side down. 

3. Sprinkle some salt on chicken.


4. Put one piece of cheese at one end of the chicken.


5. Put vegetable shreds on it. I chose cucumber, carrot and celery. Spread some corn starch at the rest part of chicken.


6. Roll the chicken from one side to another. Tie it with kitchen twine tightly. And sprinkle some salt and black pepper on the roll.


7. Put chicken roll at one end of foil. Roll the foil up. And tigh two ends.


8. Preheat oven to 200 degree C. Around 30 mins.

9. Heat a little oil in the pan. Put chicken roll in the pan. Fry till skin becomes golden brown.

10. Take off the kitchen twine and cut into small pieces.



Stir Fried King Oyster Mushroom

I cooked this dish when I stayed with my family in China during holidays and my family loved it, especially my father.

I used 4 vegetables: garlic ( a little), king oyster Mushroom, carrot and bell pepper.

1. Heat a little oil in the pan. Add in garlic slices and stir fry a bit. Put in carrot slices. Stir fry till carrot turns a bit softened.

2. Add in king oyster Mushroom slices. Stir fry. Water will come from Mushroom. Just keep stir frying till water all gone.

3. Put in bell pepper slices. Stir fry a bit.

4. Add in oyster sauce( I added 1 tsp). Stir fry evenly. If the dish still tastes a bit light, you can add a little salt. If it tastes ok, it’s done.
